I call this one jello for a fello because it is jello and I am a fello. It’s a really simple dessert so I wont write too much. If you missed the last post, then you can check it out here. This post is about a simple gelatin recipe that is sugar free. I all do is make my favorite flavor of gelatin. Its really easy if you have ever made it, then I put it in the fridge until it is ready. I then place it in the freezer until it is icy. Then I take it out, put a dab of sugar free whipped topping and then It is ready to eat. I said it was simple!

One of the biggest problems that diabetics have today is all our fault collectively as human beings. We could just take what the world gave us as in fruits and vegetables and animals for what they were – we had to have more. Apples, berries, and nuts were simply just not enough. Out greedy taste buds craved the sweet stuff. So, natural what do you think most diabetics want to eat? If you guessed desserts then you deserve a medal. That was a tad bit of sarcasm for you guys. But really, the human mind is constructed in such a way that it always years for what it cant have. That’s my opinion at least. That we always want what we cannot have. Therefore, most diabetics want to have desserts. What I have learned to do as a diabetic is to readjust my idea of what a dessert actually is. I make all kinds of desserts that I think are tasty like this one here.
Many people just don’t see a bowl of baked apples as a good dessert, but I do. It tastes good with granny smith apples and a tad bit of sugar free whipped topping. My doctor has advised me to stay away from sugary foods, so that is what I will do. I will do whatever it takes and make adjustments where needed. So, the dessert that I am writing about today is one that I created for myself with my own creativity. Doesn’t that make me special. I love peanuts so I made a version of a peanut butter buster parfait – except that it has a little less buster and a lot more pudding. I use pudding, sugar free whipped topping, and peanuts. Sugar free ice cream tends to have a decent amount of carbohydrates so I use sugar free chocolate pudding instead. I just layer them all in a small cup. I eat it in small proportions so that I get just enough to satisfy my sweet tooth. It’s a pretty simple layout really. The reason that people love to go out and eat is based on two different factors. One is that people love the taste and the other is the presentation. Yep, its amazing how a few tweaks in the presentation can make a dessert more enjoyable. So, today I would like to talk about a easy diabetic dessert - banana pudding recipe that I have been tweaking for years. Now, there are two ways to make this tasty treat. One is the hard way and the other is the easy way. I don’t know about you folks, but I like doing things the easy way. Therefore, I use a sugar free banana pudding mix. I think there is a sugar free banana cream pudding as well. So it basically calls for a package of sugar free pudding, some sugar free vanilla wafers, and some sugar free whipped topping. Now, I also sometimes use vanilla pudding and add some bananas. It gives the dessert a more natural texture and taste.
This recipe takes all of about five minutes for me to make; although it does take some more time for the pudding to set in the refrigerator. Anyways, the idea is simple and the rest is left up to creativity. I like to lay a vanilla wafer and a banana slice on the bottom, then add a layer of pudding, and then reapeat.

After several years of being a diabetic, it’s safe to say that you learn a thing or two. I can honestly say that I have over the years. I’ve learned how to manage my diabetes and how certain foods are metabolized and effect my body. Over those years I have found a few low sugar and low carbohydrate desserts that I like and that work with my particular case of diabetes. So today I just felt like writing about a quick and easy diabetic desserts that I have held onto for years.

This next one is a favorite of mine during the warm months. There is nothing like a few, cool, perfectly squared pieces of gelatin on a hot day. I use the sugar free version to fit my particular diet and then top it off with some sugar free/ fat free whipped topping.
One of my favorite fruit desserts uses granny smith apples and a bit of granulated splenda brown sugar. I take the skin off of the apple, dice it up, and then warm it up. After that, I add the granulated splenda to give it a bit more flavor. To make this even better I add some sugar free whipped topping.
The last of these easy diabetic desserts is a sugar free popsicle recipe. It real simple, all I do is get a set of those homemade popsicle trays, and then get some sugar free juice. Today I am here to discuss diabetic dessert recipes. Well actually, I am a diabetic and have always liked to find new and exciting things to eat. The one ingredient that I really like, sugar, has to be limited. Actually, I try to find desserts that do not have sugar in them – or at least originally. I have found that carbohydrates eventually turn into sugars in the body. So one day, I had the bright idea of trying to make an apple pie with an artificial sweetener such as splenda. The idea was simple really all I needed to do was get a pie crust, preferably wheat, some apples, and some splenda. I believe that the recipe called for brown sugar as well as regular sugar, so I found both regular splenda and brown sugar splenda to replace the two ingredients. So, after preparing this tasty, easy, dessert, I was quite surprised. It tasted really good for being made with real granny smith apples and an artificial sweetener.

After reviewing many of the “diabetic desserts” on really big sites, I am baffled to say the least. I know from my doctors instructions that I am really supposed to watch the amount of sugar intake. Therefore, I have been using artificial sweeteners like splenda to compose tasty dessert recipes. However, almost all of these recipes that I am finding involve using real sugar. It’s quite interesting.
Anyways, there is a chocolate pudding recipe that is simply top notch. Like most of the desserts that I eat, this one is sugar free. It may even be fat free, but I really don’t remember. Its made by the biggest brand of gelatin there is, but this version is for chocolate lovers. It’s as simple as adding a little skim milk and then the equivalent of about five miles of churning, a bit of time in the ice box, and it is ready to eat. Now that five miles of mixing had a little imaginative fun behind it. I really don’t think that I could honestly mix for that long. Think about that, one full turn in a mixing bowl is about a foot – give or take a few inches. A mile is more than a thousand feet, so that would be a lot of mixing for a dessert. I believe that this diabetic chocolate pudding recipe really only takes a couple minutes to completely mix. Refrigeration time really isn’t that long either so all in all, this one is pretty simple. Simple is good though. With all of its simplicity, this dessert recipe is affordable as well.
